  • Preheat oven to 250°F. Line 2 baking sheets with parchment paper; set aside. Using sharp knife, slice potatoes lengthwise into 1/4-inch thick slices or crosswise into 1/4-inch thick coins for smaller treats.

  • Place sweet potato planks on prepared baking sheets. Bake about 3 hours or until fairly dried out and chewy, turning once. Remove from oven and transfer sweet potato chews from the pan to a wire rack to cool completely.

  • Transfer to an airtight container and store in the refrigerator up to 2 weeks.

Tips

To make in a food dehydrator: Arrange sweet potato planks in a single layer on mesh-lined dehydrator trays. Dehydrate at 125°F for 8 to 10 hours or until planks appear dried out and chewy. Cool completely before storing.
